Strawberry Grapefruit Ice Cream

Our 21 day detox is over! It was a very good learning experience but I am also very glad that it is done. It was sometimes a little stressful restricting my diet more than it already is. However, I did learn where I needed to change some eating habits so that was beneficial. It is definitely a little rough transitioning out of the detox though.

Grapefruit was one of the only fruits we could have on this detox and we had a bunch leftover so I wanted to do something different with it. My husband loves grapefruit so this was something I made for him. Grapefruit can be quite tart to me so I added some strawberry and coconut milk to help level out the tartness. This is really a super easy and fast mix to make and then you can just throw it in your ice cream maker.

I used the hallowed out grapefruit as bowls. It is a super easy and fun way to serve the ice cream. I just stuck it in the oven on 200 for about an hour until it dried out some.


Servings: 1 quart

1 grapefruit

12 frozen strawberries (8 oz)

¼ cup coconut sugar

1 teaspoon vanilla

1.5 Tablespoons coconut oil

2 oz dates (about 8)

1 can full fat coconut milk

Melt the oil in a saucepan and add the sugar, grapefruit flesh, strawberry and vanilla. Let simmer for about 5 minutes on medium high heat. Throw the ice cream mixture and dates  in a blender and puree. Strain the mixture through a fine mesh sieve. Pour the strained batter back in the blender and add the coconut milk. Mix thoroughly and then place in the refrigerator until cool. About 1 hour. Then follow the manufactures instructions for your ice cream maker.

  1. I totally wanna make this but I have questions first: Can you substitute another grapefruit instead of the strawberries if you like it tart? The instructions say to add coconut milk but the ingredient list doesn’t have coconut milk. How much do I add? Finally, is there a way to freeze the mixture in a pan if i don’t have an ice cream maker? Thanks so much!


    • Nicole, thank you for pointing out the coconut milk. That is what happens when I do posts when I am tired! :).
      It is 1 can of full fat coconut milk. You could easily do double grapefruit instead of the strawberry. I have not tried it without an ice cream machine but I would imagine you could just freeze the mixture in a shallow pan.I’ve seen a lot of recipes for no-churn ice cream that do that. Let me know if you try it!

  3. OLD FASHION ice cream maker…?
    We used two coffe cans (1lb & 5lb) to make ice cream it is fun for the kids to roll around churning the ice cream. To the 1lb can add the ice cream mix and replace lid and tape the lid real good. Place this can into the center of a 5lb can add ice to fill-in the gaps between the cans add some ice cream salt to the ice and put on the 5lb can lid and tape on this lid too. Give the kids some sticks to roll the can around for 20- 30 min until they are tired (the Kids not the ice cream) then remove the lids and scoupe out your picnic go anywhere ice cream. And the kids will sleep so good tonight.
    Save the cans they are hard to get these days.
